# Döner Spice Blend
**14 tbsp**

- *3 tbsp* sweet paprika
- *3 tbsp* cumin
- *2 tbsp* ground coriander
- *2 tbsp* fenugreek
- *2 tbsp* thyme
- *1 tbsp* marjoram
- *1/2 tbsp* black pepper
- *1/2 tbsp* savory
- cayenne

# Vegan Döner Kebab

- *450 g* vital wheat gluten
- *150 g* gram flour
- *50 g* nutritional yeast flakes
- *350 ml* water
- *4 tbsp* tomato paste
- *2 tbsp* Marmite
- *100 ml* dark soy sauce

- *1 tbsp* salt
- *100 ml* olive oil
- *2 tbsp* maple syrup

Mix wheat gluten, gram flour, nutritional yeast and half of döner spice blend and salt in big bowl. Mix water, half of tomato paste, marmite and half of soy sauce.
Gradually add liquid ingredients to dry ingredients stirring as you go until a cohesive dough forms. Roughly shape dough into 2-3 cm flat circle.
Let rest for ten minutes, then loosely wrap in greased aluminum foil and steam for 30 to 45 minutes until firm and springy. Allow to cool then slice very thinly (about 1 mm slices).
For the marinade mix remaining tomato paste, soy sauce, spice blend, maple syrup and oil. Season generously with salt. Add sliced seitan and allow to marinate for 10 minutes. Preheat pan over medium high, add seitan with marinade and fry until slightly crispy.
